Today we just stayed home and hung out. We kicked back and enjoyed being together. I took some time to sort through the four boxes of Carson's old clothes and determine what to keep for Jonas (since I know Grandma will supply him with some clothes of his own). I now have a sizable pile of little boy clothes in my hallway that are going to be divided into a DI pile and a pile to take to Kid-to-Kid and see if we can get any money.
Jeff has been an angel today and taken the boys and played with them. I love my children, but it was nice to be able to get some things done!
I spent a good part of my afternoon printing off new recipes I found online. I tried a new peanut butter cookie recipe and they turned out pretty good. It has NO flour in the recipe. Here it is...
1 cup peanut butter
1 cup sugar
1 egg
Mix and cook at 350 for 8 minutes.
Seems like it might be a decent recipe for when I am teaching Home Ec...that is if I have 7th graders again.
Sorting through all of Carson's old clothes made me nostalgic and I looked up a picture of what Carson looked like at 4 months. I think he was bigger than Jonas is; Carson was pretty chunky until he learned how to crawl at 6 months. I still need to go do Jonas' 4 month well-baby so I know how big he is!

Are you teaching again? Those peanut butter cookies look so good and easy at the same time! It is awesome that Jeff can be home more now! I bet Carson loves it! Thanks for phone call! Sorry that I had to cut it short! Keep in touch!
mmm must try the recipe. Kendall wants to try and make cookies for us tomorrow as part of his f.h.e. Lesson? lol we'll see how they turn out. I can't imagine Carson as a little baby..but he sure was cute.
Okay, I need to clarify, evidently I was tired when I posted last. I am NOT teaching right now, but am always looking for ideas for when I do go back. I might be looking for a teaching job soon if our financial situation doesn't improve. A new baby, a month of unemployment, and moving to a different state definitely drain the bank account. Sorry for the unclear typing!!
I have the same recipe but it calls for 1 tsp baking soda as well. That makes all the difference in consistency and makes it my favorite recipe for PB cookies (375* for 8 minutes). They won't harden like other PB cookies and you can be done, start to finish, in just a little over 15 minutes! Try 'em with the B-soda... you'll like it.
BTW... Your boys ( all!) and your home is beautiful! I've been "homeless" before too, and really appreciate having a home to come to.
we made cookies just like this but had 1/4 c brown and 3/4 c white sugar and 1 tsp vanilla. then we rolled them in balls, pushed a thumb print in them and put jelly in the hole. yum!
